Are you a fan of cheesecake? Then try this no-bake berry cheesecake!

You will need: - 250g De Vries Shortbread - 50g melted butter - 2cups Cranberry juice - 200g Strawberries - 200 g Blueberries - 500g Cream Cheese - 1 cup Icing Sugar - 300 ml Double Cream - Kiwis, Strawberries and Blueberries to garnish

Method: 1. Grease the pan and line with baking paper. 2. Crush the biscuits until fine and mix with butter. Spoon into baking tray. 3. In a small saucepan, place strawberries and 1 cup of cranberry juice over low heat. Stir and gently crush strawberries. Remove from heat. 4. Using a sieve, push through as much pulp as possible. 5. Repeat process with Blueberries. 6. Beat the cream cheese and icing sugar until smooth. 7. Divide the icing into two bowls and mix the strawberry puree into one bowl and the blueberry puree into the other bowl. 8. Pour strawberry mix over the biscuit base. 9. Put in fridge for 2 hours. 10. Pour the blueberry mix over the strawberry. 11. Place in fridge for 4 hours. 12. Top with fruit.
